چکیده
Discarded carrots are a major food waste that is produced from cultivation to sale. This has high humidity, which generates not only economic but also environmental problems, requiring specific biorefinery for its valorization. The pulp and the juice were separated received different treatment. was subjected process of separation purification using several diafiltration cycles (30 kDa) giving rise fraction rich in carotenoids (4996.4 μg/g) sugars (84.83 ± 3.26 g/L) nutrients. have potential applications pharmaceutical industry; therefore, they formulated through encapsulation with gum Arabic spray drying freeze drying. Encapsulation effective as it improved stability water reduced degradation by 51.9% compared unencapsulated carotenoids. sugar-rich valorized obtain lactic acid ethanol three types fermentation: autochthonous microorganisms, bacteria, yeast, resulting obtaining mostly (17.64 1.54 or (49.46 0.28 g/L). addition 6% (w/v) NaCl medium allowed production pure both microorganisms bacteria. Sugar consumption (92.4–97.5%) except cases (23.3%) bacteria (43.8%) where pH control seems be necessary total sugar consumption.

Pressurized hot ethanol extraction of carotenoids from carrot by-products.
Carotenoids are known for their antioxidant activity and health promoting effects. One of the richest sources of carotenoids are carrots. However, about 25% of the annual production is regarded as by-products due to strict market policies. The aim of this study was to extract carotenoids from those by-products. Conventional carotenoid extraction methods require the use of organic solvents, whic...
متن کاملAn economical biorefinery process for propionic acid production from glycerol and potato juice using high cell density fermentation.
An economically sustainable process was developed for propionic acid production by fermentation of glycerol using Propionibacterium acidipropionici and potato juice, a by-product of starch processing, as a nitrogen/vitamin source. The fermentation was done as high-cell-density sequential batches with cell recycle. Propionic acid production and glycerol consumption rates were dependent on initia...
متن کاملFermentation Characteristics of Shindari Added with Carrot
Shindari is a traditional fermented drink of Jeju in Korea, which is made with boiled barley and nuruk for short fermentation periods. This study determined chemical, microbiological, and sensory characteristics of the modified Shindari with 15% carrots as an additive (carrot Shindari), and this study compared it with a traditional Shindari as a control. After fermentation at 30°C for a day, th...
متن کاملEffect of acidification on carrot (Daucus carota) juice cloud stability.
Effects of acidity on cloud stability in pasteurized carrot juice were examined over the pH range of 3.5-6.2. Cloud sedimentation, particle diameter, and ζ potential were measured at each pH condition to quantify juice cloud stability and clarification during 3 days of storage. Acidification below pH 4.9 resulted in a less negative ζ potential, an increased particle size, and an unstable cloud,...
